Freeze drying

Be careful not to mix freeze drying and dehydration ! They are two completely different processes.

Freeze-drying is the complete dehydration of a food using a low-temperature evaporation processor. The process is quite complex: the food is kept at an excessively cold temperature in order to allow the sublimation of the ice contained in the food into water vapor. In this way, the food retains its shape, color and flavor. The difference: the texture. We will obtain a result similar to a potato chip or a "cheese turd", depending on the food in question.

There are several advantages to freeze drying. First, since it is a cold dehydration process, there is no heat. This allows the food to retain most of its nutrients. In addition, since most of the water is removed, the food is much lighter once freeze dried. It is therefore a way to easily transport food when hiking for example, or on the plane. Also, it is a way to consume common foods in new and unusual ways!
