🍵 Iced Matcha Latte with Banana Pudding (like on TikTok!)

🕒 Total time: 15 minutes + 2 hours in the fridge

🧋 Servings: 2 cups of banana pudding mix

💚 Ingredients

For the banana pudding cream:

  • ½ bag of freeze-dried bananas from Lyo et Co.

  • ½ package instant vanilla pudding (Jell-O style)

  • 1 cup of milk or plain, cold plant-based drink

  • 1 cup whipping cream or whipping coconut cream

  • 1 fresh banana, sliced

  • 1 large handful of vanilla biscuits (Nilla style), torn into pieces

For the iced matcha latte:

  • 2 tsp matcha powder (we LOVE Yuno Matcha 💚)

  • 3 tbsp hot water

  • ¾ cup milk or plant-based drink

  • Ice cubes

👩🍳 Preparation

Prepare the banana pudding cream

  1. Grind the freeze-dried bananas into a fine powder using a food processor.

  2. In a bowl, combine the banana powder, instant pudding, and milk. Whisk until smooth. Let stand for 5 minutes.

  3. In a separate bowl, whip the cream until stiff peaks form.

  4. Fold the whipped cream into the pudding mixture, and gently mix well with a spoon.

Climb the floors like a "banana pudding"

  1. In a large dish with a good height, make the following layers:

    • A layer of banana pudding cream (half of the mixture)

    • Half of the vanilla cookie pieces

    • A few slices of fresh banana (1/2 banana)

    • Repeat a second layer

  2. Refrigerate for at least 2 hours.

Prepare the iced matcha latte

  1. Dissolve the matcha in hot water and whisk vigorously (traditionally or with a frother).

  2. In a large glass filled with ice, add:

    • ¾ cup milk

    • Whipped matcha

    • 2-3 spoonfuls (or more!) of the banana cream on top.
