Salmon tartare colored with freeze-dried pink dragon fruit đ

đł Servings: for 2 tartars
Salmon preparation:

- 150 g of fresh salmon, tartare quality
- 1 tbsp olive oil

1 tbsp fresh lime juice

1 tbsp chopped green onion
-
1 tbsp chopped fresh cilantro

1 pinch of salt
- 150 g of fresh salmon, tartare quality
Tartare toppings:

â cup fresh mango, cubed

â cup freeze-dried pink dragon fruit cubes from Lyo et Co.

â cup avocado, cubed

â cup cucumber, diced

đ„ Instructions

Prepare the salmon
Cut the fresh salmon into cubes approximately 0.5 in x 0.5 in.
In a bowl, combine olive oil, lime juice, green onion, cilantro, and a pinch of salt. Refrigerate while preparing the remaining ingredients. -
Prepare the toppings
Cut the mango, avocado and cucumber into small cubes. -
Assemble the tartare

With a ramekin lined with plastic wrap :
Assemble the layers in this order â salmon (half), 1/3 cup mango, 1/3 cup dragon fruit, 1/3 cup avocado, 1/3 cup cucumber. Make the 2nd tartare in another ramekin. -
With a round cookie cutter :
Assemble in reverse order â cucumber, avocado, dragon fruit, mango, then salmon.

Carefully unmold the tartare and serve with slices of toasted bread or crunchy crackers.
